Optimal HR on behalf of its client, a renowned 5-star hotel in Thassos, is looking for an experienced and creative Executive Chef with at least 15 years of expertise to lead their kitchen and elevate their dining services to the next level. Menu Development and Planning:
- Design seasonal menus for buffet and à la carte services.
- Develop unique recipes that reflect the hotel’s culture and Mediterranean traditions.
- Ensure all menus are costed accurately for profitability.
- Maintain consistency and quality across all dishes.
- To ensure that the weekly/biweekly menu is properly executed.
- Provide the hotel with a detailed menu that includes allergen information.
Kitchen Management:
- Lead and supervise a team of Sous Chefs, Section Chefs, and kitchen staff.
- Train staff on cooking techniques, recipes, and safety protocols.
- Oversee scheduling to ensure smooth operations during peak and off-peak times.
Food Preparation and Cooking:
- Oversee the preparation of all dishes, ensuring quality, presentation, and portion standards.
- Assist in cooking during high-profile events or busy periods.
Inventory and Cost Control:
- Manage stock, ordering ingredients and monitoring inventory.
- Minimize waste and ensure the kitchen is cost-efficient.
Health and Safety Compliance:
- Ensure the kitchen meets ISO 22000 standards and all food safety regulations.
- Oversee regular inspections and maintain hygiene standards.
Customer Interaction and Feedback:
- Accommodate special dietary requests and handle any food-related complaints professionally.
Collaboration:
- Work closely with front-of-house staff to ensure seamless service.
- Maintain strong communication with all departments for successful operations.
